The ingredients

The ingredients were selected to meet the very highest quality standards. Already, over 80 per cent of the ingredients are organic. To create a perfect product, you need perfect ingredients.

Milky Oolong

Thanks to special ageing techniques, it develops a creamy, almost buttery mouthfeel with notes of aged milk, vanilla and ripe apricots.

Pai Mu Tan (White Peony Tea)

It holds a special place. Only the most tender, silvery-haired buds and the first young leaves are harvested by hand in spring and gently left to wilt in the open air.

Lapsang Souchong

This traditional black tea from the Wuyi Mountains owes its distinctive character to a special processing method: the damp tea leaves are roasted and dried over resin-rich pine wood.

Genmaicha

It is made from green tea and roasted and puffed brown rice. It evokes notes of fresh crust, nuts and a malty depth. It is precisely this savoury character that makes it the perfect base for complex culinary fusions.

Sencha

To achieve the deep green colour and intense freshness of these green teas, the tea fields are shaded with nets a few weeks before harvest. The result is an intensely emerald-green leaf with a sweet, grassy, sea-fresh aroma. On the palate, Sencha offers an invigorating, lively acidity and crisp freshness.

HERBS AND SPICES

Industrial beverage production is often dominated by synthetic flavourings and highly concentrated extracts produced in a retort. For an artisanal producer, this is out of the question. When botanicals of the highest purity are used, there is no need for artificial enhancers – nature provides the full spectrum of flavours all by itself. The plant retains its vitality and vibrant aromatic character.

LAVASALT

It suppresses unwanted bitter notes, brings out the fruity notes and enhances the natural umami sensation on the palate. It also emphasises the minerality.

OAK CHIPS

This gives the drink more body, a firm structure and that characteristic, slightly smoky, woody finish.

VERJUS

Its acidity is exceptionally elegant and delicate, blending seamlessly into the dish’s textures. Verjus lends our fusion dishes the necessary freshness and that lively finishing touch that the palate demands from a professionally crafted pairing.

MEADOW SWEET

This is one of the most fascinating native wild plants. In liquid preparations, meadowsweet imparts an enchanting, fairy-tale-like sweetness on the nose, without burdening the palate with actual sugar.

Nutritional values

Whilst fruit juices are high in calories, our drinks are light and complement the flavours of the menu. Our fusion drinks have an extremely low sweetness profile, derived primarily from natural fruit ingredients. This ensures that the drink remains refreshing, pairs well with food and is a pleasure to drink.
